In 2013 I moved from Scotland to Kent to take up the offer of a new position with a company near Ashford. Team activities and staff morale was important to the company and baking was one of the things my team liked to do. I began baking cakes for my team and although I had enjoyed baking in the past it had always been a challenge for me to get them just right.

I started thinking up new ideas for things to make and one day I was given a recipe book from my hubby all about homemade candy/sweets and one of the recipes was for Marshmallows. This intrigued me as I had no idea until then how marshmallows were made! and although I did enjoy the occasional marshmallow, up until then I had only tried the dry pink & white varieties available from my local supermarket. I thought I would give it a go and I am glad I did! Handmade Marshmallows are like little pillows of heaven and nothing like the mass produced ones! I took them into work and my team and other work colleagues could not get enough of them and from that moment on I was hooked!

In late 2014 we launched our bespoke Celebration Cakes. These creamy, fruity, pillowy cakes which are made of our own marshmallow recipe have become a favourite in Cafe's and Deli's throughout Kent and also at our markets and on line. Marshmallows have taken over my life and I now work full time for myself building up the business and spending my days thinking up new flavours to bring to my customers.
